Indians cannot have festivals without sweets. The food has the ability to unite people whether it is the festive Diwali lights or festive Christmas carols. Actually, the celebration does not start till the kitchen is filled with the odor of new cookies made in my house.

In this article, I will tell you of three simple and traditional sweet recipes that go well during Diwali days and Christmas. These are recipes that had proved to work in the family kitchen. I will also provide stepwise way of building them so that even unskilled people can build them.

Now, be ready your apron, mamma and music, and begin to cook something quick and sweet!

1. Rava Ladoo

When running home into theirs one night of Diwali, my mother would cook within half an hour. It is easy, delicious, and does not require an excessive number of ingredients.

Ingredients:
  • Rava/Sooji (semolina) - 1 cup
  • Sugar - 3/4 cup
  • Ghee - 1/4 cup
  • Cashew nuts - 10
  • Raisins - 10
  • Cardamom powder - 1/2 tsp

Step-by-Step Method: Heat ghee in a pan ( 1tbsp ) and fry cashew nuts and raisins until they turn a golden brown. Keep aside.Add rava in the same pan and roast on low burner till a nice aroma is achieved. Do not let it turn brown. Add cardamom powder to the powdered sugar and mix them in a mixer. Stir in the mixture of sugar to the roasted rava. Heat the ghee when added gradually to the mixture. Add cashews and raisins. Blend and roll small balls (ladoo) when hot. Done! Above in 20 minutes, you will be able to serve your ladoos made of rava. These stay fresh for 4-5 days.


 2. Gulab Jamun

Post-Christmas cakes might be popular, however in most South Indian homes over Christmas, Gulab Jamun also has a plate place. Grandmother will say, we do not have any party without gulab jamun. I completely agree!

Ingredients:

  • Milk powder - 1 cup
  • Maida (all-purpose flour) - 1/4 cup
  • Baking soda - a pinch
  • Ghee - 2 tbsp
  • Milk - as needed to knead
  • Sugar - 2 cups
  • Water - 2 cups
  • Cardamom - 2 pods
  • Water rose - native few (optional)

Step-by-Step Method: Combine ghee, baking soda, mix milk powder and maida. Little by little put in the milk and compose to a soft dough. Do not over-knead. Roll into small smooth balls. Put some heat oil / ghee in a kadai and fry the balls on low fire till golden brown. Keep turning to cook evenly. In the mean, cook boil water, sugar and cardamom 8-10 Minutes to make sugar syrup. Add rose water if you like. Let the fried balls be dripping in hot syrup during the sincere time of at least 1 hour.

Tip: Always fry on low flame. When being fried fast, the outer part of it will turn light brown and the inside will stay uncooked.



3. Plum Cake

Without Alcohol (Christmas Special) - Plum Cake. Without a plum cake, now what is a Christmas? Conventionally, it is prepared using rum-pickled stir-up fruits although the ingredients used here are five basic, alcohol- free and almost troublesome and eggless ones that can be made at the comfort of their own home.

Ingredients:

  • Maida (all-purpose flour) - 1 1/2 cups
  • Powdered sugar - 1 cup
  • Butter - 1/2 cup
  • Curd - 1/2 cup
  • Baking powder - 1 tsp
  • Baking soda - 1/2 tsp
  • Milk - 1/2 cup
  • Dry fruits (raisins, cashew, tutti frutti) mixed- 1 cup.
  • Spices (cinnamon, clove, nutmeg powder)- 1/2 tsp each.

Step-by-Step Method: Grease a baking pan and butter paper. Spray the dry fruits with a small amount of maida in order to make them not sink during baking. Cream butter and sugar in a bowl till fluffy. Add curd and mix well. Sieved maida, baking powder, soda, and spices. Slowly add this to the butter mixer. Add Scotch milk to fine-tune consistency. Fold in the dry fruits. Pour into baking tin and bake at 180degC 40 min -45 min. Test with a toothpick - when the toothpick is not soiled your cake is done. Once cooled, slice and serve. It would be better to prepare it one day prior to Christmas because the flavor is enhanced after one day.

Motherhood festivals like Diwali and Christmas are about lights, affection and unity. We share joy with each other through food only. Whether a quick ladoo, a soft gulab jamoon or a rich plum cake this is what counts as long as your loved ones are smiling.
